Markus Rainalter

Director of Food & Beverage

Sofitel has appointed Markus Rainalter to the role of Director of Food & Beverage for the Sofitel Sydney Wentworth, who will collaborate closely with Boris Cuzon as Executive Chef.

Markus has more 10 years of experience in food and beverage management and has worked in many different countries the world over including Thailand, the United Kingdom and Dubai in the UAE.

Markus says, “I am very excited about my role with the Sofitel in Sydney and look forward to working with Boris and the entire team to ensure that guests have a memorable dining experience, and that their meal is perfectly complimented by outstanding service and a great selection of wines that reflects our brand’s link to France and the local region.”


Boris Cuzon

Executive Chef

Boris Cuzon recently arrived in Sydney from Bangkok to assume the role of Executive Chef, overseeing all culinary operations for the award-winning hotel, including Garden Court restaurant and events catering.

Originally from Brittany in the North-West of France, Boris brings a passionate love of fine food and rich experience to his role after many years working in South-East Asia, for a style seeped in French traditions but with contemporary and fresh ‘twist’.

Prior to his Sydney move Boris was Executive Chef for the 469-room Sofitel Silom Bangkok. He has also worked at the iconic Sofitel Legend Metropole Hanoi hotel where he polished his knowledge in the preparation of fine cuisine.
